Cooking and seasoning kaniwa is similar to cooking other grains like quinoa. Rinse the kaniwa under cold water to remove any bitterness. Then, for every cup of kaniwa, use 2 cups of water or broth. Bring it to a boil, then reduce the heat to low, cover, and simmer for about 15-20 minutes or until the liquid is absorbed and the kaniwa is tender.

For seasoning, you can add salt, pepper, and herbs like thyme or oregano. You can also cook kaniwa in broth for added flavor. Once cooked, you can mix in sautéed vegetables, such as bell peppers and onions, or toss it with a vinaigrette for a flavorful salad. Experiment with different seasonings and ingredients to suit your taste preferences!
